I know the rule "dont rebid 5 card minors" but is this the time to break that rule?

I don't know that rule, but I would never bid 2D here, nor any other number of diamonds. They are vulnerable, let's defend 1NT.
Please note: I am interested in boring, bog standard, 2/1.

Annoying as it is, I think you've gotta pass. Clearly partner has almost nothing, and West already bid your 2nd suit.

If you want to bid again, you have an obvious dble to show a good hand. Dbling here after an overcall is more along the lines of "maximum overcall" than a true t/o double, so i think xx hearts is fine.
OTOH, this seems like a pretty good time to pass.

We don't have a fit and don't have a game, no reason to be aggressive - if we can make something, they are down in a vulnerable 1NT as Han said.

If partner has anything why would we try for +90 against our +100 or +200 right here? +90 against vul opponents at mp's is such an irritating score I never volunteer it if I have a choice.
If partner doesn't have anything we are going for anything from -100 to -500 against a very possible -90.

Yes, true. That was not really the reason for the post, I felt my 2♦ bid was dubious.

Seems declarer should make 2 spades. You can tap declarer 3 times and generate an extra trump trick for yourself, but then you get tapped in clubs and they only lose 3 trumps and 2 diamonds. Must have gotten help from a creative declarer.
As Phil noted, no effect on final contract. The admonition about not rebidding 5-cd minor is about rebidding after opening a minor, when your opening only promised 3. It goes double after an overcall, which already promised 5!
