I'd like to suggest that my second action should show something more than my first action did.

I'd also like to ask what I should have done with my hand. (4NT over 3 was undefined, in case that occurs to anyone, and it didn't occur to me to preview the meaning of a second double.)

I agree on all counts. Certainly forcing to the 5 level is stronger than doubling 3S. And I would have bid it exactly as you did. 4NT seems perfect, lots of offense, more minor suit orientation than a second double would imply.

Separate issue, I don't like that X denies a 5th Heart.

Yes.

All of 4NT over opening bids at one level are undefined.
All of 4NT over opening bids at three level are undefined.
