It took twelve hours of effort, but damn!  That is one fine pork crackling...
Brine pig skin for three hours
Sous vide for 2 hours at 149 degrees
Dehydrate for another seven hours
Finally, roast at 465 degrees Fahrenheit for 10 minutes
