I've seen redoubles here work out badly (opps running) but it's been at unfavorable vulnerability. I think all red at the 5-level seems relatively safe to penalize them. We are going to be setting their contract at least 2 tricks... so it seems reasonable to me.
Redouble, I think, says "SURPRISE!!!!"
With 6-6 you definitely have a bit of a surprise.
6-5 come alive 6-6 take your tricks?

I would bid 2NT the first time. By the time you actually get around to bidding diamonds it may be on 4 or 5 level. I think EW left too much room here.
I am actually surprised by E-W bidding. Why did not West bid 1S or negative double? He does have some spades, does he not? Why did East passed 3♣?

In theory new suits are 5+ and raising partner shows 3+. Sometimes you have to lie a little, usually when you can't bid NT. Here we don't have a stopper and we're too weak. I can live with ♣Txx, but not with these values.
